HIST 11800 US History: The History of Food

GE-Human Culture: US History/Government [GE-AmGovHis] Food is more than sustenance—it is culture. The foods people eat, the ways they prepare them, and their availability change over time. They reflect a series of cultural, political, and social constructs that provide a window into the culture of the people growing, making, consuming, and shipping them. This course will use the history of food preparation, processing, transporting, and consumption as a window into American history.
